Freezing Berries & Butternut Squash WIC
As the seasons change, so does the type of produce you find at the market. However, that doesn’t mean you have to stop enjoying some of your favorite flavors!
Stock up on nutrient-packed berries during the spring and summer, beautiful butternut squash during the fall, and enjoy them throughout the winter by freezing them. Here’s how:
- Wash berries in a bowl over cold water. Drain and let them dry on paper towel.
- Wash squash. Cut the top and bottom and then cut in half. Remove skin with a sharp knife or peeler from top to bottom. Cut into cubes and discard seeds.
- Freeze produce in a single layer (without touching) on a tray lined with wax paper.
- Store frozen produce in freezer bags. Remove air from the bag and seal. Label bags with dates.
To soften the skin of the butternut squash, pierce it with a fork in several places and microwave 3-4 minutes. Remove from microwave with a towel and follow cutting instructions.
Use squash in soups, stews and berries in smoothies, yogurt, or oatmeal.
